Low-Cal meal idea

I browse thru magazine recipes all the time and have never tried to cook anything I've seen. I think it looks so much easier on a page than trying to tackle it myself. I was feeling slightly ambitious the other day and decided to try this seemingly easy recipe for green beans w/ chicken and crumbled feta I saw in People magazine. The recipe was featured by the Biggest Loser host Alison Sweeney as a great low-cal meal option.

Now, the magazine claimed that it would cost under $10 but of course that wasn't the case... however, it was still an easy and quite tasty recipe to try.


Green Beans w/ Chicken and Crumbled Feta Cheese
- 1 lb skinless, boneless chicken breasts
- 1 tbsp olive oil (plus some for drizzling)
- 1 lemon
- l oz fresh green beans (1/2 cup per person)
- 1/2 cup fresh feta cheese, crumbled
- 1 tomato, chopped
- 1/2 avocado (optional)
- salt and pepper to taste

1. Broil chicken with a dash of olive oil and lemon slices on top for 4 to 5 minutes. Turn the chicken halfway through, and squeeze lemon juice over the chicken. Cook for another 4 to 5 minutes.

2. When chicken is almost done broiling, drop green beans in boiling water and boil for 1 to 2 minutes. Strain green beans, taking them out while they're still bright green and crispy. Toss them into a bowl with 1 tbsp of olive oil, crumbled feta and chopped tomato. You want the green beans to still be warm when you do this to melt the cheese slightly. If desired, slice the 1/2 avocado and add it in.

3. When chicken is done, cut into pieces and toss in with green bean mixture. Serve.

2010 Minority Male Initiative Conference


National research shows that Minority males are not attending or graduating from college at the same rate as their female or Caucasian male counterparts. The Maricopa Minority Male Initiative is designed to improve retention and degree completion rates by providing a multi-faceted approach that encourages academic achievement, promotes personal and professional development, and provides support for students to stay in college, graduate, and achieve their goals.

March 4th Maricopa Community Colleges will be hosting their 1st annual Minority Male Initiative Conference at Glendale Community College. This free event is scheduled to run from 8am - 4pm and will include breakfast and lunch. Students should also note that an excused absence will be given for any classes missed. Take advantage of this great opportunity to connect with other minority males and discuss issues that are affecting you.

Weather Woes

Living in Chicago I learned to accept that weather could be completely random... but the last thing I expected was a freaking snow storm in South Carolina! The South hadn't experienced any snow since 1997 and everything was shut down... including my flight out of there. I found myself stuck in the Columbia, SC airport and having to soldier up and call it a night. I must give props to anyone that is capable of sleeping in an airport as I wasn't. I just couldn't get comfortable. I was worried about my bags. I was worried about people walking around me. I was annoyed by the florescent lights that were on charge... not to mention the ladies voice that kept popping up every 20 mins reminding me to keep an eye on my bags. Geez! With all of that going on it was hard to get comfortable. Since I'm officially a military dependent I was able to enjoy the USO lounge, but once that closed it was a painful 10 hr wait until my flight boarded. I managed to kill some time watching Ghost Whisperer and How I Met Your Mother... but then I was drawing blanks. All around me folks seemed to have gotten cozy and catching zzzzz's, but not me. I was like a freaking zombie wide awake. I even killed some time by going to the bathroom and doing a twist-out on my hair! lol....

In addition to the walk, there will be many activities for your pets and family to enjoy including: Bone yard for your dog, Paw Painting, a bounce house for kids, food and drinks, vendor and sponsor booths, as well as the famous Purina Incredible Dog Agility Team. All friendly, well-mannered pets are welcome to attend.

Happy Valentine's Day

This Valentine's Day is extra special to me because I'm able to celebrate it with my wonderful husband.

Julian - You mean the world to me! Not only are you my husband, but you're my best friend, soul mate and $5 buster :) You have shown me the true meaning of love and with you I know all things are possible. Everyone isn't blessed to find the type of love that we have and for that I am truly grateful... you are an amazing man and I know that I'm a better person for having you in my life. It's an honor to be your wife, your best friend... and VP of Operations :)

Living Every Day

My husband and I have been slightly lost in our own world of newlywed bliss, but we do try and make time for The Daily Book of Positive Quotations by Linda Picone - - Our way of taking at least a moment out of the day to reflect on something together .... (or realizing that a few days has gone by and we forgot to read it and we're left cramming lol... "procrastinaaaaatorrrrssss" )

Living Every Day

How often do we ask ourselves, as if waking from a dream, "Where has the time gone? What happened to yesterday? Last Week? Last Month? Last Year?"

Our lives are all that we have on earth, and yet how many days do we let slip by without living them as fully as we might?

Living every day doesn't have to mean trying to achieve something significant every moment that we're conscious. No one could sustain a life like that. It just means doing something each day that adds value to our lives and the lives of others.

Apply It: I will do something today that will make me feel that I have really lived it.


It's easy to leave a lot of things in the planning or developmental stage, but life is precious and every day so awesome... we need to really start living it before it's too late... we're too old... or you know, the rapture comes lol... but in all honesty, why not make today the day you check something off of your list of things you've always wanted to accomplish!!

On my list, I was sitting here thinking about how I hadn't written a blog in a while and I decided to just write one. Fairly simple, I know... but it's about DOING instead of just THINKING!!
